A good breakfast sandwich is always something I look forward to whenever we are traveling. I love a bagel or english muffin with eggs, cheese and sausage. So, why not just make it at home? It’s a simple breakfast you can make in minutes and the homemade version tastes just like you local cafe for a fraction of the price and WAY better than any version at a drive through.

Start this recipe off by making the sausage. I used Tennessee Pride Sausage, because I’m a southern gal and I love their hot sausage with a bite.

I followed the directions on the packaging. It’s pretty much just cut sausage thickness, cook on one side, flip and cook on the other side until they are done.

While the sausage is cooking on the second side. Head up a skillet with a little olive oil to make your eggs.

It’s crazy to me that I grew up eating white eggs and now realizing that eggs are never white. This one, from a local farm down the street, was green. I made fried eggs for this meal, but you can make them sunny side up or over easy depending on how runny you like them.

Line up your english muffins on a tray and add the cheese and eggs to the bottom muffin while the egg is still hot and then the sausage.

To finish my sandwiches off, I topped them with a little hot sauce, pink salt and pepper. You can never have enough heat in my mind. They turned out tastier than any cafe or coffee shop!

Ingredients:

The best part about this recipe is you can make as many or as few as you like! Alter the amount to however many sandwiches you want to make.
Sausage
Eggs
English Muffin
Olive Oil
Salt and Pepper
White Cheddar Cheese
Hot Sauce – if desired

Instructions:

  1. Cook desired amount of sausage patties in a skillet over medium heat, as instructed by packaging.
  2. Heat 1tsp olive oil over medium heat.
  3. Add one egg and cook for a minute or two, depending on how runny you like it.
  4. Repeat this process until you have the amount of eggs you need.
  5. Add cheese to english muffins and top with eggs, then sausage
  6. Top with salt and pepper and possibly hot sauce
  7. Enjoy!
